Food for Thought

It was about 4 months ago that I was introduced to one of the tastiest baked sandwiches I have ever had. It is called the Subpocalypse. This monster of a sandwich was actually created from a contest that Costello Sandwich and Sides hosted in 2011. Here is a real quick break down how it worked. People submitted their ideal sandwiches based off a list of ingredients. The staff at Costello’s including the owners; Glenn and Rob shuffled through over 400 entries. They picked the top 4. Costello’s hosted a final four-esq tournament. For a month the sandwiches were sold at the stores. At the end, they tallied up the sales of each masterpiece only to have one winner. There was the glorious Subpocalypse standing alone, victorious. I know you are all wondering what makes this sandwich so good. Could it be the Ciabatta sub roll? Or could it be the layers of the smoked turkey, ham, and capicola, that is topped with bacon? The bacon is not ordinary bacon it is jalapeno bacon. Yes, you heard me right…jalapeno bacon! It is stupid good. Hold on, it doesn’t stop there. They throw on cheddar, pepper jack , lettuce, tomato, onion, pepper rings and wait for it…chipotle ranch. Dude, I fell in love with it during the first bite. Too good! Honestly, I am not sure what it is exactly about the sandwich that makes in unforgettable. My guess is it is how everything comes together to smack your taste buds right in the face.

Right about now, you are all probably wondering, “Why the hell is this guy talking about sandwiches on Built In Chicago’s blog?” I’ll tell you why! There are blogs of suggestions of where to work, what are the best tools for this and that, how to get funded, yada, yada. What we don’t talk about is one of the most important tools an entrepreneur has, their mind and body. Food is the fuel that is needed to keep us going through the crazy 14-hour days. Hence, why I bring up this delicious sandwich that has a long list of cousins to keep your taste buds jumping and your mind & body moving. The sandwiches and sides of Costello’s are not only a perfect meal for a casual lunch, but you can excite your team with something unique to the menu during your next meeting. Hosting a pitch or a workshop? No problem, have these scrumptious sandwiches and sides waiting for your guests and be guaranteed to have them eagerly waiting to see how they can reciprocate because you gave them the gift from the food Gods. Full disclosure: The reason I was introduced to them 4 months ago is because we were looking to do marketing for Costello’s, which we do now. So, yes, I am a little biased. However, I guarantee you will not be disappointed. Everyone I know who has tasted one of their magically delicious baked sandwiches has never said a bad thing about them.  It is my honest opinion, client or not, you will love it, too.
